Occasionally if I step on the pedal, my 04 'ho will bog down a little bit or there is a lag before it gets going. What are some options for increasing throttle response during low, mid, and high RPMs?
Already have cat back exhaust and a AEM cai.

clean it. Take CAI off, and really clean it and clean down the throat of the TB with like Chemtool. Make sure it's really aired out before re-assmbly. You may need a screwdriver to hold the TB butterfly open, while cleaning it.

seafoam won't clean the tb at the opening...you'll have to do most of it by hand. remove the cai and start to wiping...use tb cleaner to help.
then you might invest in a bb tune too!

so a dirty TB would cause that big a lag in acceleration?

A hand-held tuner would work, changing the throttle response and the rev limiter in the tune. I currently have a superchip Flashpaq that gets the job done until I can get the BB tune. But I would Definitely save the money and get the BB tune.
i noticed an improvement after i did plugs and wires. then again your 04' probably doesn't have 105,000 on it like mine.
You need a tune and some electric fans. Longtubes will help too.

Seafoam can't hurt, but probably won't help a ton on it's own. Always a good thing to do though, especially if you haven't run it through before. Here's what I'd do:
1. Take off your TB, clean it out thoroughly. Make sure you get the crud that builds up around the pivots of the butterfly, as well as all of the passages.
2. Make sure your plugs and wires are in good shape. If not, replace.
3. GET A BB TUNE! Since you already have the AEM intake, a tune will really wake your truck up. I had the tune when I was completely stock, then added the AEM afterwords and noticed a very suprising difference.
4. Switch to e-fans when you have the cashish.

this is a big 10-4...
as for the throttle body clean, i recomend this as it is always smart to keep the TB clean, however i doubt it is dirty enough to bog the motor down, and if you are going to clean it just pull the whole thing off and clean it with TB cleaner, and replace the TB gasket. Also, while your at it, you might as well do the coolant bipass too.
but seriously, invest $300 in a custom tune, best $300 you will ever spend.

i wonder how much a local BB tune would cost? looks like i am about 15 minutes from them.
