As the question reads has anyone done this and how hard was it?

Replaced both last year. Not hard at all. 4 nuts to separate the top from the bottom, usual plugs and trim piece covers and don't forget to disconnect the seatbelt first.

I watched good videos on the seatbelt on Vehcor's website. The rest is pretty intuitive. Brought the seats into the house and did all the work on my coffee table.

I say "I" but paid a helper to do all the tough stuff while I supervised!

Do you recall which one of Vehcor's videos talked about the seat track?
